
About the Recipe
A play on a classic Caesar salad, but with more nutrients and variety! Packed with flavor, fiber, and vitamins it is sure to keep you full and happy.

Ingredients
Lemon-Tahini Dressing
1/2 cup Water
1/3 cup Tahini
Juice of 1 lemon (1/4 cup)
2 tbsp Hemp Seeds
1 tbsp Tamari or Coconut Aminos
1 large clove Garlic
Salad
4 cups stemmed and thinly sliced Tuscan or Curly Kale (lightly packed)
1.5 cups shredded Brussels Sprouts (lightly packed)
1 cup thinly sliced Radicchio or Red Cabbage (lightly packed)
1 Carrot
1 tbsp Nutritional Yeast
1/2 cup Roasted Chickpeas
1/3 cup toasted Sliced Almonds
Preparation
1. Put all dressing ingredients into blender and process until smooth, scrape the sides and process again.
2. In a large bowl add kale, Brussels sprouts, radicchio.
3. Use a vegetable peeler to shave long, thin strips of carrots, then coarsely chop into 2-inch pieces. Add into kale mixture.
4. Sprinkle nutritional yeast over the top of kale mixture. Drizzle with dressing and toss gently.
5. When ready to eat add chickpeas and almonds onto the top and serve.
