About the Recipe

Crisp greens, nutty walnuts, tart blueberries, creamy goat cheese, and tender grill stone fruit come together in this Stone Fruit Grilled Salad. Topped with a fresh basil vinaigrette this salad will have you savoring every last bite of summer.

Ingredients

  • 1 head of red leaf lettuce (chopped)

  • 3 stone fruit (plucots, peaches, plums, apricots) (quartered, pits removed)

  • 1/2 cup blueberries

  • 1/4 cup chopped pecans

  • 1 ounces crumbled goat cheese

  • 1 cup fresh basil

  • 1 tbsp honey

  • 1/2 cup rice vinegar

  • 1/2 cup olive oil

  • salt and pepper to taste

Preparation

  1. In a large bowl combine lettuce, stone fruit, pecans, blueberries, and goat cheese.

  2. In a blender combine basil, honey, vinegar, oil, and salt and pepper. Blend until smooth.

  3. Serve dressing on the side of salad.
