A vibrant and zesty Italian style dish that features a medley of tasty vegetables and chickpeas sauteed in a seasoned marinara sauce over spaghetti noodles.

Ingredients
1 cup onion, a chopped onion
1 cup red bell pepper, a large red bell pepper
6 cloves garlic, minced garlic
1 teaspoon dried oregano
1/2 teaspoon dried thyme
4 cups zucchini, medium zuchinni halved lengthwise and cut into 1/4-in slices
1 1/2 cups chickpea, canned chickpeas rinsed and drained
1 cup marinara sauce
1 tablespoon white wine vinegar
8-10 whole leaves fresh basil leaf, chopped fresh basil leafs
1 cup spaghetti, cooked spaghetti noodles
Preparation
Heat an extra-large skillet over medium temp. Add the first five ingredients; cook for 10 minutes stirring often and adding water 1 to 2 Tbsp at a time as needed.
Heat large pot over medium temp. Once water begins to boil, add 2 oz of spaghetti noodles and cook for 10 min or until noodles are al dente.
Add zucchini; cook 10 minutes until zucchini is tender. Stir in chickpeas marinara sauce, and vinegar. Season with sea salt and black pepper optional for taste. Heat through. Serve immediately with added basil as garnish.
