Healthy Key Lime Pie Chia Pudding

About the Recipe

Get all the flavor of a Key Lime dessert, without all the additives and sugar. High in protein and nutrients this is great for a snack, dessert, or even breakfast.

Ingredients

  • 3 Tbsp chia seeds

  • 1 regular lime or 2 key limes, juice + zest

  • 1/2 cup plain greek yogurt ((benefits of Greek yogurt))

  • 1/2 cup unsweetened almond milk ((or other milk))

  • 1 tsp pure maple syrup

  • 1/4 tsp matcha powder, for colour (optional)

  • 1/4 cup graham crackers, crumbled (optional)

Preparation

  1. In a bowl, jar, or container, add chia seeds, lime juice, lime zest, yogurt, almond milk, maple syrup, and matcha powder (if using). Stir together well.

  2. Cover and place chia mixture in the fridge for at least 2 hours or overnight.

  3. Remove from the fridge, stir again, and serve with graham cracker crumble!
