About the Recipe

This grape salad is Mediterranean-inspired, and can help support and promote a healthy gut. With a base of fruits and vegetables and rounded out with great unsaturated fats to help reduce inflammation.

Ingredients

  • 2 ½ - 3 cups grapes (halved)

  • 2 cups cucumber (sliced and quartered)

  • 1 cup cherry tomatoes (halved)

  • 1 large red bell pepper (diced)

  • ½ red onion (diced)

  • ½ cup walnuts (chopped and toasted)

  • ½ - 2/3 cup feta (crumbled)

  • 2 tbsp. olive oil

  • 1 tbsp. balsamic vinegar

  • 1 tsp. salt

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • ½ tsp. cracked black pepper

  • Juice of ½ lemon

  • 2 tbsp. dill (chopped)

  • 2 tbsp. mint (chopped)

Preparation

  1. In a large bowl, combine ALL of the ingredients.

  2. Mix to combine and adjust seasoning to taste.

  3. Drizzle extra balsamic vinegar on at the end if you’d like!

  4. Enjoy this flavourful, gut-friendly, delicious salad!
