
About the Recipe
This grape salad is Mediterranean-inspired, and can help support and promote a healthy gut. With a base of fruits and vegetables and rounded out with great unsaturated fats to help reduce inflammation.

Ingredients
2 ½ - 3 cups grapes (halved)
2 cups cucumber (sliced and quartered)
1 cup cherry tomatoes (halved)
1 large red bell pepper (diced)
½ red onion (diced)
½ cup walnuts (chopped and toasted)
½ - 2/3 cup feta (crumbled)
2 tbsp. olive oil
1 tbsp. balsamic vinegar
1 tsp. salt
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. cracked black pepper
Juice of ½ lemon
2 tbsp. dill (chopped)
2 tbsp. mint (chopped)
Preparation
In a large bowl, combine ALL of the ingredients.
Mix to combine and adjust seasoning to taste.
Drizzle extra balsamic vinegar on at the end if you’d like!
