This easy recipe for garlic chicken and green beans is a simple and delicious family-friendly weeknight meal.

Ingredients
2 chicken breasts (butterflied into 4 pieces)
Salt & pepper (for seasoning)
1 tablespoon olive oil
1/2 cup chopped onion (about 1 small onion)
2 cloves of garlic (minced)
2 cups low-sodium chicken broth
1 1/2 teaspoons cornstarch
2 teaspoons fresh thyme (finely chopped, or 3/4 teaspoon dried thyme or poultry seasoning)
1 lb fresh green beans
4 cloves of garlic (minced)
2 teaspoons Italian seasoning
Pinch red pepper flakes (optional)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup water
1 lemon (divided)
Preparation
1. On a flat surface, butterfly the two chicken breasts into 4 thinner pieces. Pat dry with a paper towel and season with salt and pepper on both sides.
2. Over medium-high heat add olive oil and chicken breasts in the hot pan and cook for 4 min on the first side, once golden and seared, flip over and continue cooking for 4 to 5 min until the internal temp is 165F.
3. Set chicken aside.
4. To the same pan add another tablespoon of oil. Add onions and sauté until they turn translucent and golden. Add garlic, and stir to cook the garlic, 30 seconds.
5. Add chicken broth to the pan, bringing it to a simmer while stirring the tidbits from the bottom of the pan.
6. Add thyme, stir to combine, and reduce the heat to medium-low to simmer for 5 minutes.
7. Meanwhile, add green beans to a large skillet over medium-high heat. Add the garlic and sauté for 30 seconds, until fragrant.
8. Add green beans to the pan, Italian seasoning, red pepper flakes, salt, and pepper. Add the water to the pan and cover it immediately. Reduce the heat to low and simmer for 10 to 12 minutes, stir occasionally.
9. Squeeze half a lime on beans, stir and turn off the heat.
10. If needed thicken sauce with cornstarch.
11. Top chicken with sauce and serve with green beans!
