
About the Recipe
Plant-based doesn't have mean no bbq flavors. This nutrient packed black bean and veggie burger has a nice smokey flavor with a touch of spice!

Ingredients
2 cups cooked quinoa, cooled
1 (15 oz) can refried black beans
1/2 medium bell pepper, finely chopped
1/4 medium red onion, finely chopped
1 medium carrot, shredded
2 tbsp chopped fresh cilantro (2 tsp dried)
1/4 cup light Mayonnaise
1/2 cup whole-grain bread crumbs
1 tsp chipotle powder
Preparation
1. Preheat oven to 375 degrees F. Spray baking sheet with cooking oil.
2. In medium bowl, combine quinoa, beans, bell pepper, onion, cilantro, mayo, bread crumbs, and chipotle powder. Stir until well combined.
3. Scoop 1/2 cup of mixture, pat into a patty about 3 inches in diameter and 1 inch thick, place on baking sheet. Should make about 10 patties.
4. Bake until first, 40-45 minutes.
