Craving something sweet? This great recipe satisfies the sweet tooth without being ultraprocessed and you have control over the amount of sugar going in!

Ingredients
250g cherries, stoned
140g unsweet shredded coconut
30g maple syrup
30g unsweet dry cherries, finely chopped
100g 80% dark chocolate
15g pistachios, finely chopped
Preparation
1. Roughly blend the whole cherries and strain out the excess cherry juice, save the juice for later!
2. In a large mixing bowl, using your hands, mix the blended cherries, coconut, syrup, and 2/3 of the dried cherries. Combine until firm. If mixture is too crumbly add some of the cherry juice from step 1.
3. Divide mixture evenly between 6 freezer safe bowls. Pack down the mixture so the top is flat.
4. Melt the chocolate in a double boiler.
5. Spoon the chocolate evenly over all 6 bowls.
6. Sprinkle the remaining dried cherries and pistachios over top.
7. Place in fridge to cool for 45 to 60 minutes.
