
About the Recipe
This recipe is Thai inspired, with a spicy peanut dressing. The thinly sliced Brussels sprouts make for a nice fiber filled and crunchy salad. It is also excellent as a warm salad. Lightly sautée the Brussels, combine the other ingredients, dress, and serve for a cooler weather salad packed with flavor!

Ingredients
1 pound Brussels sprouts
1 medium red bell pepper, chopped
3 green onions, sliced
1/2 cup chopped fresh cilantro
Dressing
1/4 cup creamy peanut butter
Juice of 1 small lemon (~2 tbsp juice)
1 tbsp low-sodium soy sauce
1/2 small jalapeño, chopped
1 medium date, pitted
1 inch fresh ginger, peeled
1 garlic clove, peeled
Preparation
1. Trim the stem from the Brussels sprouts, then thinly slice or shave using a mandolin, food processor, knife, etc.
2. Combine Brussels sprouts with bell pepper, green onion, cilantro.
3. In food processor or blender, combine dressing ingredients with 2 tbsp of water. Pulse until smooth.
4. Pour dressing over salad, toss to coat and serve!
