About the Recipe

Savory breakfasts are a great way to start your day off without spiking blood sugars. This great breakfasts provides high protein, high fiber, and of course high flavor.

Ingredients

For Black Bean Hash:

  • ½ tablespoon of olive oil

  • 1 can of black beans, drained and rinsed

  • ½ teaspoon of cumin

  • ½ teaspoon of paprika

  • ¼ cup of chopped onion*

  • 1/4 cup of chopped red pepper

  • 1/4 cup of chopped green pepper

  • 2 cloves of garlic*

  • ¼–½ cup of broth


For Serving:

  • Fried egg

  • Cilantro

  • Tomato

  • Avocado

Preparation

  1. In a medium skillet, heat your oil over medium heat. Once hot, add in the onion, peppers, and garlic and cook for 2 minutes.

  2. Add in the black beans, ¼ cup of broth, and spices.

  3. Cook until the black beans are heated through, stirring frequently. Using the back of a wooden spoon, lightly mash about ¼ of the black beans. You can skip this step but it creates a nice and creamy texture! If black beans seem quite dry, add in a couple more tablespoons of the broth and heat through.

  4. Remove black beans from heat and divide among 2 plates. Top with fried eggs and other desired toppings!
