About the Recipe

A warm and cozy start to your morning, this baked oatmeal gives the deliciousness of a morning casserole without all the added sugars and the bonus of extra protein to help keep you going into the day.

Ingredients

  • 1 tablespoon canola oil

  • 1/2 cup unsweetened applesauce

  • 3 tablespoons raw honey

  • Egg substitute equivalent to 2 eggs, or 4 egg whites

  • 3 cups uncooked rolled oats

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1 cup skim milk

  • ¼ cup raisins

  • ¼ cashews

Preparation

  1. Preheat oven to 350 F

  2. In a good-sized bowl, stir together oil, applesauce, sugar and eggs.

  3. Add dry ingredients and milk.

  4. Mix well.

  5. Spray a 9-by-13 baking pan generously with cooking spray.

  6. Spoon oatmeal mixture into pan.

  7. Bake uncovered 30 minutes.
