About the Recipe

Quick and easy, this sandwich is great for lunch or dinner to-go. Avocado provides a great healthy fat spread while sliced chicken is lower in sodium and preservatives than deli meats. Feel free to add any other veggies to dress it up! Be sure to choose a bread full of whole grain and seeds.

Ingredients

  • 2 slices multigrain bread

  • 0.25 ripe avocado

  • 3 ounces cooked boneless, skinless chicken breast, sliced (see Tip)

  • 2 slices tomato

Preparation

  1. Toast bread.

  2. Mash avocado with a fork and spread onto one piece of toast.

  3. Top with chicken, tomato and the second piece of toast.

**Other great veggie toppings: lettuce, microgreens, bean sprouts, peppers
