Butternut Squash and Quinoa Hash

Servings: 4

Ingredients

  • 1 cup Quinoa, cooked

  • 1 large Butternut Squash, peeled and cubed

  • 1/2 cup Onion, diced

  • 2 Tablespoons Olive Oil

  • 1 large Red Pepper, diced

  • 1 large Green Pepper, diced

  • 1 teaspoon Rosemary

  • Salt to taste

  • Pepper to taste

Cooking Instructions

Place olive oil, onions, and butternut squash in skillet and cook on medium heat covered about 7 minutes, until starting to soften.

 

Add in peppers and continue cooking until softened

 

Add in quinoa, salt, pepper, and rosemary

Serving Instructions

Serve with eggs for breakfast, as a side or as a light meal.
